Khooba Roti is proudly made and served in every household in Rajasthan. Its name, ‘Khooba’, comes from the small pits or patterns imprinted on its surface, which also add to its visual appeal. This roti is thick, and crispy on the outside, yet remains soft on the inside.
To prepare Khooba Roti, you will need wheat flour, 2 tablespoons of ghee, salt, and water. Start by mixing the ghee and salt into the flour, then knead it into a stiff dough. Divide the dough into balls and roll out thick, small rotis.
Use a knife or spoon to make light cuts on the surface, which is a signature of the roti. Bake the roti on a pan over low heat, then finish by cooking it directly over the flame and brushing it with ghee.
